Grated vegetable salad
Hand graters and mandolins! You'll use them to completely put together the elements of this salad: potatoes, beets, carrots, celery and apples.

2 small uncooked beets
three carrots
200 g of celeriac
1 apple
2 tablespoons of lemon juice
2 tablespoons of grainy mustard
three tablespoons of rapeseed oil
5 l of apple juice

1 bunch of chives
four tablespoons of smoked almonds

Preparation:
ca. 40 minutes
Boil the potatoes of their skins for approx. 30 minutes, till they soften a bit.
In the meantime, grate the beets, carrots, celery and apple. Sprinkle the apple with lemon juice. Emulsify the mustard with the oil. Add the apple juice and blend every little thing. Season with salt and pepper.
Peel the potatoes and grate them lengthwise, to acquire presumably lengthy strips. Prepare them in a tray with the thinly sliced greens. Gown with the mustard sauce. Coarsely chop the chives. Chop the almonds and distribute them with the chives on the grated salad. Helpful ideas
For a contact of crunchiness: sauté the potatoes for approx. 5 minutes in butter to roast.
When time is operating out: use already grated carrots and celery.
